I always get so excited to share our new gluten free travel discoveries with you, and today is no exception! We've learned about an exotic resort situated on a cliff edge next to rainforests and a waterfall in one of the world's most beautiful tropical beach towns...Montezuma, Costa Rica. Best of all, the resort has been completely gluten free for almost two years. It's part of their mission to provide their guests with healthy food -- which also means a focus on food that's natural, organic, and local. The resort is dairy free, too, and they can even accommodate other dietary restrictions. All you need to do is let them know!
The resort is called Anamaya, meaning "good health" in Sanskrit. While you can stay at this beautiful oasis for any reason, most people flock here for the yoga retreats and/or the surfing lessons. (The resort is just 40 minutes from Santa Teresa and its famous surf spots -- and just minutes away from other amazing beaches for surfing.) You can do one, the other, or a combination of both (yoga helps work on strength and balance -- key for surfing!). There's also the option to get scuba certified. Of course, there is much exploring to do all over Costa Rica...it's an adventurer's paradise.
The idea at this "good health" resort is to combine healthy eating, exercise, relaxation, adventure, and fun! No need to worry if you've never done yoga or surfed...beginners are more than welcome! You'd be hard-pressed to find a more beautiful spot to do yoga...just check out the view from the yoga studio! For yoga aficionados who are ready to take the "next step," they even offer yoga teacher training.
Having practiced yoga myself pretty consistently for 20 years now, I have to say this is someplace I'd like to visit. It's one of those places that appears to be a true vacation -- getting "off the grid," being immersed in nature, and enjoying incredible food. Chef Jeff Horton, who inspired the resort to become gluten free, even sources all their flours locally and mixes them to provide the best taste and consistency so his guests can't even tell they're gluten free. He uses a combination of flours from sweet potato, green plantain, rice, tapioca (yucca), amaranth, coffee (the fruit shell, so there's no coffee flavor), coconuts, chia, flaxseed, arrowroot, and oats. Some of their locally grown ingredients even come from their own farm just down the road from the resort. The mission here is to serve healthy, minimally processed meals full of protein and healthy fats -- and with lots of local fruits and vegetables.
