This is a long overdue post to rave about one of the best gluten free dining experiences we've had in a long time. I know...none of us did much in the way of dining out for way too long during the height of the pandemic. But still, I'd put Nebo Cucina & Enoteca up against any gluten free dining experience in any big city. It was that memorable. Another reason it was memorable was because it was not just a meal, but rather a party to celebrate my mother-in-law's 80th Birthday. She didn't want to be involved in the planning, per se, preferring things to be a surprise, but she did request it be held in Boston, which is where she grew up. And, of course, we wanted to find a venue that was very "gluten free friendly," if not completely gluten free, as my mother-in-law (and my son and my sister-in-law) are all Celiac. We wanted my mother-in-law and the other GF folks to be able to eat everything we ordered, without having to "miss out" on anything served. A couple weeks ago a recipe in the Wall Street Journal caught my eye (this is my all-time favorite publication, and, yes, they do occasionally have recipes!). They called it Smoky Strata, and it's a fairly simple recipe combining bread, eggs, tomatoes, onions, milk, ricotta and Parmesan. I decided to adapt it to be gluten free, of course...and also added chicken sausage for extra protein and flavor. I also omitted harissa, so my version isn't really "smoky" or spicy. It's a bit like a lasagna but with bread instead of lasagna noodles...and a lot more eggs than a lasagna would have (however, it's not an eggy breakfast dish, but rather a hearty lunch or dinner). Most of these ingredients you will probably have on hand already, and the others are easy to find. Here is my adaptation of this rustic, tasty meal that is sure to please everyone... Ingredients: 3 Tbsp butter 1 large Vidalia (sweet) onion, finely chopped 2 1/4 tsp salt 1/4 tsp black pepper 1 tsp paprika 1 28-oz can diced tomatoes, drained 2 large chicken sausages (or 6 smaller link style sausages), diced or crumbled. I'd never really tried Eggplant Parmesan until I was well into adulthood, so it's no surprise my sons won't give it a fair shot. But I love it. So when I saw some beautiful eggplants in the grocery store last week, I got a craving. I rarely make it, and I figured I'd go to the effort even if my husband and I were the only ones who would enjoy it. The great thing is...I almost always have all the ingredients for this recipe on hand, except for the eggplant. I'd gotten a fantastic tip from an Italian friend years ago...she told me to slice the eggplant thin and let it soak in milk for at least several hours before preparing the recipe. This is supposed to take the bitterness out of the eggplant. And it totally works! The recipe that follows is just adapted from the recipe we use for Chicken Parmesan, and I essentially "wing it." If you're a lover of Italy but have already visited some of the bustling cities like Rome, Florence, Venice, or Milan, you owe it to yourself to consider a trip that's more "off the beaten path," but still just as enjoyable and fascinating. Some of you may remember me mentioning a travel opportunity to the Umbria region of Italy a few months ago. Let me start by saying that dining at Il Canale Italian restaurant in Georgetown made me feel like I was back in Italy, where our family had the opportunity to travel last summer. Part of the reason for this is that they are known for their authentic Neapolitan-style thin crust pizza, cooked in a wood-fired oven imported from Italy. It's also got that lively vibe and friendly service you find at Italian trattorias. Add to that other tradtional Italian specialties on their menu -- fresh and just like you'd find in Italy -- and you've got all the makings of a great night out! To be clear, Il Canale does not offer gluten free Neapolitan-style pizza (at least not cooked in the wood-fired oven, due to cross contamination concerns). But they use an Udi's non-GMO gluten free pizza crust as a base for all their wonderful toppings like fresh Buffalo mozzarella, basil, prosciutto, olives, and more. Every so often, our family makes a new version of a "homemade" gluten free pizza. We've tried many brands, and to be honest, we don't have a favorite...they actually all turn out pretty well. But to be honest, many times we go with our favorite ready-made frozen gluten free pizza (or frozen shell, which we top with our own sauce and toppings). We love Against the Grain pizzas (and plain shells) and have also enjoyed Udi's frozen pizzas when cooked on the grill. But traveling in Italy this summer inspired us and had us looking forward to trying a new mix for gluten free crust...a mix from one of our favorite restaurants in Florence. Picazzo's Organic Italian Kitchen and its founder Rick Freedman have always been trailblazers in the dining world. Picazzo's was one of the first to offer a large choice of gluten free options on their menu -- even many years ago -- and with each passing year, their menu has become more gluten-free friendly. In fact, their entire menu is now gluten free, save for the option to order pizza with either their organic "original" crust or organic whole-grain crust (of course, they do have gluten-free pizza, too...more about that in a moment). Whereas most gluten-free-savvy restaurants have a separate area of the kitchen for preparing their gluten free orders, Picazzo's Organic Italian Kitchen is the opposite. Earlier this summer, our older (non-Celiac) son who doesn't like pizza anyway was off to a camp with friends. It provided a great opportunity for me to have some in-the-kitchen bonding time with our younger son (who has Celiac) making pizza (which he loves!). We've tried all sorts of store-bought gluten free pizzas over the 10 years since our son was first diagnosed with Celiac, and we've also bought "naked" crusts to customize them ourselves.
